WHY VEGETARIAN?

We feel that avoiding meat is important for lots of reasons including the development of expanded consciousness.

We have also found a totally raw vegan diet to be unsustainable for most people and grossly inadequate for young children.

There are obvious nutrients such as vitamin B12 and fat soluble vitamins A and D — but also more subtle factors available in animal products which seem to keep the body operating properly.

We surmise that in our tropical forest days, insect matter was automatically consumed on the food that we ate and that by eating unpasteurised dairy produce, for example yoghurt, kefir (a kind of yoghurt), cheese, butter and milk in small quantities, we are replicating this effect.

The ancient Essenes, well-known for their spiritual lifestyles and healing abilities included raw milk products in their raw diet.

Unpasteurised dairy products are very different in their effects to pasteurised and we recommend anyone who has had trouble with pasteurised to experiment with unpasteurised.

Yoghurt and kefir are easily digested by most people. Ethically produced dairy products are available. Goats’ and sheep’s milk products are generally easier to digest than cows’.

Some people report that they get on better with eggs or fish than dairy products and it may be that some of us need the fatty acids in fish.

However we keep the cuisine we produce to lacto-vegetarian ingredients.
